The chefs draw upon ingredients from their own gardens and from close collaboration with local farmers and fishermen. Before The Sanubari opened, the founders established a small school where members of the local community were taught agricultural practices.

The ingredients from the estate’s own farm include rocket, lettuce, tomatoes, cucumbers, beans, herbs and a variety of fruits, which are also shared with residents of neighbouring villages. In addition, an initiative has been launched for water purification, ensuring that adults and children from nearby schools and communities have access to clean drinking water.

The aim is for the farm to produce sufficient organic goods — including homemade oils, creams and milk — to be sold in a village shop, thereby equipping the local community with new skills.
